Ube (a.k.a. purple yam from the Philippines) is hugely popular in the Philippines and has been for thousands of years and has become somewhat trendy in the West the last few years.
We make this ice cream using ube jam and powdered ube giving it an earthy vanilla flavour. The house-made marshmallow fluff is made using coconut sugar to give this ice cream a sweet and complex flavour.
Ube ice cream is widely eaten in the Philippines (and beyond!) for good reason - because it tastes really good!
